Ingredients:

  • 500g beef sirloin or tenderloin, thinly sliced
  • 1 cup mushrooms, sliced (button or cremini)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Egg noodles or rice (for serving)

Instructions:

  1. Prepare the Beef: Season the sliced beef with salt and pepper. Heat a large skillet over medium-high heat and add 1 tablespoon of butter. Sear the beef slices for 2-3 minutes on each side until browned. Remove from the skillet and set aside.

  2. Cook the Vegetables: In the same skillet, add the remaining tablespoon of butter. Sauté the chopped onions until they are soft and translucent, about 5 minutes. Add the minced garlic and mushrooms, cooking until the mushrooms are tender and have released their juices.

  3. Make the Sauce: Stir in the Dijon mustard and Worcestershire sauce. Pour in the beef broth, bringing the mixture to a simmer. Allow it to cook for 5 minutes, reducing slightly.

  4. Combine and Simmer: Return the seared beef to the skillet, stirring to combine. Reduce the heat to low and stir in the sour cream, mixing until the sauce is creamy and smooth. Let it simmer for another 5-7 minutes until the beef is cooked through and the flavors are well combined.

  5. Serve: Serve the beef stroganoff over egg noodles or rice, garnished with fresh parsley.

Enjoy this rich and comforting dish, perfect for a cozy dinner!
